Ingredients

2 cups hazelnuts (raw)

¼ cup unsweetened cocoa powder

½ cup powdered sugar (or adjust to taste)

1 teaspoon vanilla extract

¼ teaspoon salt

23 tablespoons neutral oil (such as vegetable or hazelnut oil)


Instructions

  1. Roast Hazelnuts: Preheat your oven to 350°F (175°C). Spread hazelnuts on a baking sheet and roast for 10–12 minutes, or until the skins darken and crack.
  2. Remove Skins: Let the hazelnuts cool slightly, then rub them in a clean kitchen towel to remove as much of the skins as possible.
  3. Blend Hazelnuts: Transfer the hazelnuts to a food processor and blend for 5–8 minutes, scraping down the sides as needed until it turns into smooth nut butter.
  4. Add Remaining Ingredients: Add cocoa powder, powdered sugar, vanilla extract, salt, and 2 tablespoons of oil. Blend again until smooth, adjusting the consistency with more oil if needed.
  5. Store and Serve: Transfer to a jar and store at room temperature for up to 2 weeks or refrigerate for up to 1 month.
