Ingredients

2 sticks unsalted butter (1/2 lb., softened)

1 cup vegetable oil

1 cup granulated sugar

1 cup confectioner’s sugar (sifted)

2 large eggs

1 teaspoon vanilla extract

4 cups all-purpose flour (500 gr.)

1 teaspoon baking soda

1 teaspoon cream of tartar

1 teaspoon salt

2 cups chopped pecans

1/2 cup granulated sugar (for decoration)


Instructions

  1. Preheat the oven to 325 degrees F.
  2. Cream together butter, vegetable oil, 1 cup granulated sugar, and confectioners’ sugar until smooth.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. Combine flour, baking soda, cream of tartar, and salt; mix into the creamed mixture. Stir in pecans.
  5. Roll dough into 1-inch balls, then roll in sugar. Place 2 inches apart on cookie sheets.
  6. Bake for 10-12 minutes or until edges are golden. Cool on wire racks.

Notes

For a crisper cookie, extend baking time by 1-2 minutes.
