Ingredients

For the Cake:

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 1/2 tsp pumpkin pie spice

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup sugar

2 large eggs

1 cup canned pumpkin puree

1/2 tsp vanilla extract

For the Crumble Topping:

1/2 cup all-purpose flour

1/4 cup packed brown sugar

1/4 cup rolled oats

1/4 tsp cinnamon

1/4 tsp pumpkin pie spice

1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
  2. Make the Cake Batter:
    • In a medium bowl, whisk flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
    • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in pumpkin puree and vanilla.
    • Gradually mix the dry ingredients into the wet mixture until just combined.
  3. Prepare the Crumble Topping:
    • In a small bowl, combine flour, brown sugar, oats, cinnamon, and pumpkin pie spice.
    • Cut in the cold butter using a pastry cutter or your fingers until crumbly.
  4. Assemble the Cake: Pour batter into the prepared pan and sprinkle the crumble topping evenly over the top.
  5. Bake: Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Let the cake cool for 10 minutes before transferring to a wire rack. Slice and serve.
