Ingredients

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1/4 cup diced green chilies (canned or fresh)

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Optional: 1/4 cup diced jalapeños, chopped tomatoes, or fresh cilantro for garnish


Instructions

  1. In a medium saucepan, melt butter over medium heat.
  2. Whisk in the flour, cooking for 1–2 minutes to remove the raw taste.
  3. Slowly add milk while whisking continuously to avoid lumps.
  4. Bring the mixture to a simmer, then reduce heat to low.
  5. Gradually stir in the shredded cheeses until fully melted.
  6. Add diced green chilies, garlic powder, paprika, and season with salt and pepper.
  7. Optionally, mix in diced jalapeños for added heat.
  8. Pour the queso into a serving bowl and garnish with tomatoes or cilantro if desired.
  9. Serve warm with your choice of dippers.

Notes

Adjust consistency by adding warm milk as needed.
