Description
This homemade strawberry cream cheese pound cake features a rich, buttery crumb balanced with tangy cream cheese and sweet fresh strawberries. Dense, moist, and elegant, it’s perfect for brunch, dessert, or gifting.
Ingredients
1 1/2 cups (3 sticks) unsalted butter, softened
8 oz cream cheese, softened
3 cups granulated sugar
6 large eggs
1 tbsp pure vanilla extract
3 cups all-purpose flour
1/2 tsp salt
1 1/2 cups chopped fresh strawberries
2 tbsp all-purpose flour (for tossing strawberries)
Optional Glaze:
1 cup powdered sugar
2–3 tbsp milk or heavy cream
1/2 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan.
- In a large mixing bowl, cream together the softened butter and cream cheese until smooth and fluffy (3–5 minutes).
- Gradually add the sugar, beating until the mixture is light and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour and salt.
- Slowly add the dry ingredients to the wet mixture, mixing just until combined.
- Toss the chopped strawberries in 2 tablespoons of flour, then gently fold them into the batter.
- Pour the batter evenly into the prepared pan and smooth the top.
- Bake for 80–90 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
- For the glaze (if using), whisk together powdered sugar, milk or cream, and vanilla until smooth, then drizzle over the cooled cake.
Notes
To prevent sinking, always toss fruit in flour before folding into batter.
Frozen strawberries can be used if thawed and well-drained.
The cake can be made a day in advance for deeper flavor.
Store at room temperature for up to 3 days, refrigerate up to 6 days, or freeze for up to 3 months.
