Ingredients

1/2 cup brown sugar

1/4 cup unsalted butter

2 tablespoons light corn syrup

1/2 teaspoon vanilla extract

1 1/2 cups milk or dark chocolate chips

1 tablespoon coconut oil or vegetable oil (optional, for smoother coating)


Instructions

  1. Make the Shortbread Base:
    Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper. In a medium bowl, mix the flour, sugar, butter, and salt until a crumbly dough forms. Press the dough evenly into the prepared pan. Bake for 15-18 minutes, or until the edges are golden. Let cool completely.
  2. Prepare the Caramel Layer:
    In a small saucepan, combine the sweetened condensed milk, brown sugar, butter, and corn syrup. Cook over medium heat, stirring constantly, for 8-10 minutes, until the mixture thickens and darkens slightly. Remove from heat, stir in vanilla extract, and pour the caramel over the cooled shortbread base. Refrigerate for 1 hour to set.
  3. Add the Chocolate Coating:
    In a microwave-safe bowl, melt the chocolate chips and optional coconut oil in 15-second intervals, stirring between each, until smooth. Pour the melted chocolate over the caramel and spread evenly.
  4. Chill and Cut:
    Refrigerate the pan for 30 minutes or until the chocolate is set. Use a sharp knife to cut the chilled mixture into bite-sized squares.

Notes
