Description

Discover the perfect side dish with these Honey Balsamic Roasted Carrots. Enhanced with a sweet and tangy honey-balsamic glaze, these carrots are roasted to perfection, offering a delicious and easy way to elevate any meal. With a crisp exterior and tender interior, they are a versatile addition to your dinner table.

Ingredients

1 1/2 pounds carrots, peeled and cut into sticks

2 tablespoons olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Carrots: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl, mix olive oil, honey, balsamic vinegar, garlic powder, salt, and pepper. Toss the carrot sticks in the mixture until evenly coated.
  2. Roast the Carrots: Spread the coated carrots in a single layer on the baking sheet. Roast for 25-30 minutes, stirring halfway through, until carrots are tender and caramelized.
  3. Serve: Transfer the roasted carrots to a serving dish. Garnish with chopped parsley and serve hot.

Notes

For a vegan version, replace honey with maple syrup or agave nectar.

Baby carrots can be used; cut them into smaller pieces to ensure even roasting.

Leftovers can be stored in the refrigerator for up to 4 days or frozen for 2-3 months.
