Ingredients
For the Cake Layers:
1/2 cup honey
3/4 cup granulated sugar
2 tablespoons unsalted butter
3 large eggs, room temperature
2 teaspoons baking soda
3 1/2 cups all-purpose flour
For the Cream Filling:
2 cups sour cream
2 cups heavy cream
1/2 cup powdered sugar
1 tablespoon vanilla extract
Instructions
- Prepare Cake Layers: In a medium saucepan, heat honey, sugar, and butter over medium heat until the sugar dissolves. Remove from heat and let cool slightly.
- Mix Dough: Beat eggs and gradually add them to the honey mixture while stirring constantly. Stir in baking soda, then add flour gradually until a soft dough forms.
- Roll and Bake: Divide dough into 8 portions. Roll out each portion into a thin circle (9 inches in diameter). Bake each layer at 350°F (175°C) for 5-7 minutes until golden brown. Let cool.
- Make Filling: Beat sour cream, heavy cream, powdered sugar, and vanilla extract until thick and smooth.
- Assemble the Cake: Spread a layer of cream between each cake layer, stacking them on top of each other. Frost the top and sides of the cake with remaining cream.
- Chill and Serve: Refrigerate the cake for at least 6 hours or overnight before serving.
