Description

This Honey Glazed Apple & Sweet Potato Casserole is a delicious twist on a classic side dish. Tender sweet potatoes and crisp apples are layered together and coated in a warm honey glaze. Toasted pecans add a delightful crunch, and a final touch of marshmallows creates a fun and gooey topping. Perfect for festive meals or a cozy treat!


Ingredients

3 large sweet potatoes, peeled and thinly sliced

3 apples, peeled, cored, and thinly sliced

1/4 cup honey

1/4 cup unsalted butter, melted

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts

Optional: marshmallows for topping


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Arrange the sliced sweet potatoes and apples in overlapping layers in the prepared baking dish.
  3. In a small bowl, whisk together honey, melted butter, cinnamon, nutmeg, and salt until well combined.
  4. Drizzle the honey glaze evenly over the sweet potatoes and apples. Use a spoon or brush to ensure all slices are coated.
  5. Sprinkle the chopped pecans or walnuts over the top of the casserole.
  6. Cover the baking dish with aluminum foil and bake for 40-45 minutes, or until the sweet potatoes are tender.
  7. (Optional) If using marshmallows, remove the foil during the last 10 minutes of baking. Scatter marshmallows over the top and return to the oven until they are lightly toasted and melted.
  8. Remove from the oven and let cool slightly before serving.

Notes

For a richer flavor, use brown sugar instead of honey in the glaze.

Want to add a touch of creaminess? Pour a cup of heavy cream over the casserole before baking.

Don’t have pecans or walnuts? Other chopped nuts like almonds or even chopped peanuts can be used as a substitute.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
