Ingredients

For the Cake:

3 cups all-purpose flour

2 cups granulated sugar

1 tsp baking soda

1 tsp ground cinnamon

3 large eggs, beaten

1 cup vegetable oil

2 tsp vanilla extract

1 (8 oz) can crushed pineapple, undrained

1 1/2 cups mashed ripe bananas

1 cup chopped pecans

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

1/2 cup chopped pecans (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, mix the beaten eggs, oil, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Gently fold in the crushed pineapple, mashed bananas, and chopped pecans.
  5. Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  7. For the cream cheese frosting, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract and continue beating until creamy.
  8. Assemble the cake by spreading frosting between the layers, then over the top and sides. Garnish with chopped pecans.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week.
