Ingredients

2 tablespoons vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

2 teaspoons curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/4 teaspoon cayenne pepper (adjust to taste)

1 can (15 oz) pumpkin puree

1 can (14 oz) coconut milk

1 cup vegetable broth

1 tablespoon brown sugar

Salt to taste

Fresh cilantro leaves, chopped (for garnish)


Instructions

  1. Heat vegetable oil in a skillet. Sauté onion until translucent. Add garlic and ginger, cook until fragrant.
  2. Stir in curry powder, cumin, coriander, turmeric, and cayenne. Cook until spices are fragrant.
  3. Add pumpkin puree, coconut milk, and vegetable broth. Stir well.
  4. Simmer over low heat for 15-20 minutes, stirring occasionally.
  5. Stir in brown sugar and salt. Adjust seasoning.
  6. Serve hot, garnished with cilantro. Enjoy with rice or naan bread.

Notes

Adjust cayenne pepper for desired spice level.

Flavor improves when allowed to sit for a day.
