Ingredients
2 tablespoons vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
2 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (adjust to taste)
1 can (15 oz) pumpkin puree
1 can (14 oz) coconut milk
1 cup vegetable broth
1 tablespoon brown sugar
Salt to taste
Fresh cilantro leaves, chopped (for garnish)
Instructions
- Heat vegetable oil in a skillet. Sauté onion until translucent. Add garlic and ginger, cook until fragrant.
- Stir in curry powder, cumin, coriander, turmeric, and cayenne. Cook until spices are fragrant.
- Add pumpkin puree, coconut milk, and vegetable broth. Stir well.
- Simmer over low heat for 15-20 minutes, stirring occasionally.
- Stir in brown sugar and salt. Adjust seasoning.
- Serve hot, garnished with cilantro. Enjoy with rice or naan bread.
Notes
Adjust cayenne pepper for desired spice level.
Flavor improves when allowed to sit for a day.
