Ingredients
For the Cake:
1/2 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup whole milk
1/4 cup Irish whiskey
1 teaspoon vanilla extract
For the Whiskey Syrup:
1/4 cup unsalted butter
1/2 cup granulated sugar
1/4 cup Irish whiskey
1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round or bundt pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the flour mixture to the wet ingredients, alternating with the milk. Begin and end with the flour mixture. Stir in the whiskey and vanilla extract.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake bakes, make the whiskey syrup by melting the butter in a saucepan. Add sugar, whiskey, and water, and bring to a boil. Cook for 2-3 minutes, stirring constantly, until the syrup thickens slightly.
- Once the cake is done, remove it from the oven and poke small holes all over the top using a skewer or toothpick.
- Slowly pour the whiskey syrup over the warm cake, allowing it to soak in. Let the cake cool completely before serving.
Notes
For best results, use room temperature ingredients.
You can substitute Irish whiskey with bourbon or Scotch if preferred.
This cake can be made a day in advance; it tastes even better after the flavors meld together.
