Description
A rich, comforting, and flavor-packed plant-based chili loaded with beans, vegetables, and bold spices. Perfect for cold nights, meal prep, or easy weeknight dinners. Gluten-free and vegan.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 medium carrot, diced
1 zucchini, chopped
2 tablespoons tomato paste
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 cup vegetable broth
2 teaspoons ground cumin
1 tablespoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon oregano
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional)
Juice of 1/2 lime
Fresh cilantro, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté for 2–3 minutes until translucent.
- Stir in the garlic, red and green bell peppers, carrot, and zucchini. Cook for 5–7 minutes until slightly tender.
- Mix in the tomato paste and stir well to coat the vegetables.
- Add the diced tomatoes, kidney beans, black beans, pinto beans, and vegetable broth. Stir to combine.
- Season with cumin, chili powder, smoked paprika, oregano, salt, black pepper, and cayenne pepper if using.
- Bring to a boil, then reduce the heat and simmer uncovered for 25–30 minutes, stirring occasionally.
- Once thickened and vegetables are soft, stir in the lime juice and adjust seasoning as needed.
- Serve hot, garnished with fresh cilantro.
Notes
For a thicker chili, simmer longer uncovered or mash some beans.
Customize the veggies based on season or availability.
Add cooked grains like quinoa or rice to make it heartier.
Store in the fridge for up to 5 days or freeze for up to 3 months.
Reheat in a pot or microwave, stirring occasionally.
