Description

Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup crushed pineapple, drained


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, followed by vanilla extract.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually combine dry ingredients with wet ingredients.
  6. Fold in crushed pineapple until evenly distributed.
  7. Drop spoonfuls of dough onto prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 10–12 minutes, until edges are golden brown.
  9. Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add 1/2 cup shredded coconut.

Substitute gluten-free baking flour for a gluten-free version.
