Description

These Italian Easter Cookies are a festive treat perfect for Easter celebrations. Ingredients

¾ cup unsalted butter, softened

1 cup sugar

3 large eggs

1 teaspoon vanilla extract

1 teaspoon almond extract

1 tablespoon baking powder

3 ½ cups all-purpose flour

For the Frosting:

¼ cup milk

2 tablespoons butter, melted

½ teaspoon vanilla extract

½ teaspoon almond extract

2 ½ cups powdered sugar

Food coloring and sprinkles (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a baking mat.
  2. In a mixing bowl, cream together the softened butter, sugar, and eggs until well combined. Stir in the vanilla extract, almond extract, and baking powder.
  3. Gradually add the flour to the mixture, stirring until a dough forms.
  4. Scoop out one-inch balls of dough, roll them in your hands, and place them on the prepared cookie sheet, spacing them about two inches apart.
  5. Bake for 10-12 minutes, or until the cookies are set but not browned. Allow them to cool completely before frosting.
  6. For the frosting, whisk together the milk, melted butter, vanilla extract, almond extract, and powdered sugar until smooth.
  7. Divide the frosting into separate bowls and add food coloring to create pastel shades.
  8. Dip the top of each cooled cookie into the frosting, letting any excess drip off. Place the cookies back on the cooling rack and decorate with sprinkles before the frosting sets.

Notes

If you don’t have almond extract, you can substitute with more vanilla extract for a slightly different flavor.

You can store the cookies in an airtight container at room temperature for up to 5 days.

Feel free to experiment with different sprinkles or colored sugar to add extra flair to the cookies.
