Description

Ingredients

16 oz Italian sausage

1/2 medium onion, chopped

34 cloves garlic, minced

1/2 tsp crushed red pepper flakes (optional)

1 cup uncooked orzo pasta

2 cups chicken broth

1 cup heavy/whipping cream

1/2 cup freshly grated Parmesan

2 cups fresh baby spinach

Salt & pepper to taste


Instructions

  1. Cook sausage in a soup pot over medium-high heat for 5 minutes.
  2. Add onions and cook for another 5 minutes until softened.
  3. Stir in garlic, red pepper flakes, and orzo, cooking for 30 seconds.
  4. Add chicken broth and cream. Bring to a boil, then simmer for 10 minutes, stirring occasionally.
  5. Remove from heat, stir in Parmesan and spinach. Cover for 3-5 minutes until thickened. Season with salt and pepper.

Notes

Adjust the amount of crushed red pepper flakes to control the heat level.

For a thicker sauce, allow the dish to simmer a bit longer or add a splash of cream.

If the orzo absorbs too much liquid, stir in a little chicken broth or cream when reheating.
