Ingredients
16 oz Italian sausage
1/2 medium onion, chopped
3–4 cloves garlic, minced
1/2 tsp crushed red pepper flakes (optional)
1 cup uncooked orzo pasta
2 cups chicken broth
1 cup heavy/whipping cream
1/2 cup freshly grated Parmesan
2 cups fresh baby spinach
Salt & pepper to taste
Instructions
- Cook sausage in a soup pot over medium-high heat for 5 minutes.
- Add onions and cook for another 5 minutes until softened.
- Stir in garlic, red pepper flakes, and orzo, cooking for 30 seconds.
- Add chicken broth and cream. Bring to a boil, then simmer for 10 minutes, stirring occasionally.
- Remove from heat, stir in Parmesan and spinach. Cover for 3-5 minutes until thickened. Season with salt and pepper.
Notes
Adjust the amount of crushed red pepper flakes to control the heat level.
For a thicker sauce, allow the dish to simmer a bit longer or add a splash of cream.
If the orzo absorbs too much liquid, stir in a little chicken broth or cream when reheating.
