Description

Light, fluffy, and fruity, Jello Divinity Candy is a modern twist on the classic Southern confection. Made with flavored Jello and no baking required, it’s perfect for holidays, parties, or gifting.


Ingredients

2 1/2 cups granulated sugar

1/2 cup light corn syrup

1/2 cup water

1 (3 oz) package flavored Jello (any flavor of your choice)

2 egg whites, room temperature

1/8 teaspoon salt

1 teaspoon vanilla extract

Optional: chopped nuts or sprinkles for garnish


Instructions

  1. In a medium saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves.
  2. Bring the mixture to a boil without stirring. Continue boiling until the syrup reaches 260°F (hard ball stage) using a candy thermometer.
  3. While the syrup is cooking, beat egg whites and salt in a large bowl until stiff peaks form.
  4. Once the syrup reaches 260°F, remove from heat and slowly pour it in a thin stream into the beaten egg whites while beating on high speed.
  5. Add the Jello powder and vanilla extract. Continue beating until the mixture thickens and holds its shape, about 6 to 10 minutes.
  6. Quickly drop spoonfuls of the candy mixture onto a parchment-lined baking sheet using two spoons.
  7. Optionally, sprinkle chopped nuts or festive sprinkles on top before the candy sets.
  8. Allow the candies to sit at room temperature for several hours or overnight until fully dry and firm.

Notes

Switch Jello flavors like strawberry, lime, or raspberry for different colors and tastes.

For a layered look, swirl two colors of Jello together before dropping spoonfuls.

Add chopped pecans or walnuts for texture.

Decorate with colored sugar or edible glitter for a festive finish.

Use concentrated gelatin or fruit extract for stronger flavor.
