Description

Are you looking for a deliciously indulgent cookie that combines the delightful flavors of coconut, almonds, and chocolate? Look no further than Joy Cookies! Inspired by the classic candy bar, these cookies offer a delightful blend of textures and tastes that will leave you craving more. With chewy coconut, crunchy almonds, and rich chocolate chips, Joy Cookies are the perfect sweet treat for any occasion.

Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup light brown sugar, packed

1 large egg

1 tsp vanilla extract

1 1/4 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1 cup sweetened shredded coconut

1 cup semi-sweet chocolate chips

1/2 cup chopped almonds

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in Mix-Ins: Gently fold in the shredded coconut, chocolate chips, and chopped almonds.
  6. Bake the Cookies: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  7. Cool and Serve: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a variation, you can substitute the almonds with pecans or walnuts.

If using unsweetened coconut, consider increasing the sugar to maintain sweetness.

Store cookies in an airtight container for up to one week or freeze for up to three months.
