Description

Soft potato gnocchi are tossed in a creamy tomato sauce with fresh spinach and tender smoked salmon for a rich yet quick dinner. Ready in just 25 minutes, this elegant dish is perfect for both busy weeknights and special occasions.


Ingredients

500 g potato gnocchi

1 tablespoon olive oil

1 medium shallot, minced

2 large garlic cloves, finely minced

1/4 teaspoon crushed red pepper

1/3 cup vegetable broth (75 ml)

2 tablespoons concentrated tomato puree

1 teaspoon Italian herb blend

1 cup water (200 ml)

100 g fresh spinach leaves (3.5 oz)

180 g cream cheese (6.3 oz)

150 g smoked salmon, cut into strips

Salt to taste

Freshly ground black pepper to taste

Freshly grated Parmesan cheese for serving (optional)


Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside once tender.
  2. Heat olive oil in a large skillet over medium heat. Add the minced shallot and sauté for 2 to 3 minutes until soft and fragrant.
  3. Stir in the garlic and crushed red pepper and cook for about 30 seconds until aromatic.
  4. Pour in the vegetable broth and simmer for 2 to 3 minutes until slightly reduced. Add the tomato puree and Italian herb blend, stirring well.
  5. Add the water and bring to a gentle simmer. Stir in the cream cheese and cook until fully melted and smooth.
  6. Add the fresh spinach and cook until wilted.
  7. Gently fold in the smoked salmon and cooked gnocchi, tossing to coat evenly. Cook for another 2 to 3 minutes until heated through.
  8. Season with salt and freshly ground black pepper to taste. Serve immediately with grated Parmesan if desired.

Notes

Mascarpone can replace cream cheese for a richer texture, or use light cream cheese with a squeeze of lemon for a lighter version.

Add sautéed mushrooms or cherry tomatoes for extra vegetables.

Increase crushed red pepper or add chili flakes for more heat.

Cooked fresh salmon can be substituted for smoked salmon.

Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently with a splash of water or broth.
