Description

Ingredients

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 tablespoon key lime juice (freshly squeezed)

Zest of 2 key limes

1/4 cup powdered sugar (for dusting)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a separate large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg, vanilla extract, key lime juice, and lime zest to the butter mixture. Beat until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges of the cookies are slightly golden but the centers are still soft.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, dust the cookies with powdered sugar for an extra touch of sweetness.

Notes

For a tropical twist, add shredded coconut to the dough.

For an extra burst of lime, drizzle a lime glaze over the cookies made with powdered sugar, key lime juice, and a little milk.

If key limes are unavailable, regular limes can be used as a substitute, though the flavor will be slightly different.
