Ingredients
1/2 cup unsalted butter
1/2 cup sugar
1 tablespoon honey
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
1/2 cup sliced almonds
1/4 cup candied orange peel, chopped (optional)
4 oz dark chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a medium saucepan, melt the butter, sugar, and honey over medium heat. Stir constantly until the mixture is smooth and fully combined.
- Remove the butter mixture from the heat and stir in the flour, baking powder, and vanilla extract until fully incorporated.
- Fold in the sliced almonds and candied orange peel (if using).
- Drop teaspoon-sized portions of dough onto the prepared baking sheets, spacing them at least 2 inches apart. The dough will spread during baking.
- Bake the cookies for 6-8 minutes or until the edges turn golden brown and the cookies become crispy.
- Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
- While the cookies are cooling, melt the dark chocolate in a heatproof bowl over simmering water or in the microwave in 20-second intervals, stirring in between.
- Once the cookies have cooled, dip the bottoms of each cookie into the melted chocolate, letting any excess drip off before placing them on parchment paper to set.
- Allow the chocolate to harden completely before serving or storing.
