Description

Ingredients

1/2 cup unsalted butter

1/2 cup sugar

1 tablespoon honey

1/2 cup all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon vanilla extract

1/2 cup sliced almonds

1/4 cup candied orange peel, chopped (optional)

4 oz dark chocolate, chopped


Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium saucepan, melt the butter, sugar, and honey over medium heat. Stir constantly until the mixture is smooth and fully combined.
  3. Remove the butter mixture from the heat and stir in the flour, baking powder, and vanilla extract until fully incorporated.
  4. Fold in the sliced almonds and candied orange peel (if using).
  5. Drop teaspoon-sized portions of dough onto the prepared baking sheets, spacing them at least 2 inches apart. The dough will spread during baking.
  6. Bake the cookies for 6-8 minutes or until the edges turn golden brown and the cookies become crispy.
  7. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  8. While the cookies are cooling, melt the dark chocolate in a heatproof bowl over simmering water or in the microwave in 20-second intervals, stirring in between.
  9. Once the cookies have cooled, dip the bottoms of each cookie into the melted chocolate, letting any excess drip off before placing them on parchment paper to set.
  10. Allow the chocolate to harden completely before serving or storing.
