Description

These Lazy Girl Pecan Pie Bars are the easiest way to enjoy the delicious flavors of pecan pie without the hassle of a traditional pie crust. With a buttery, crumbly crust and a rich, gooey pecan filling, these bars are perfect for any occasion. Whether you’re hosting a holiday gathering or enjoying a family dessert, these easy pecan pie bars will be a hit!

Ingredients

For the Crust:

1 cup unsalted butter, softened

2 cups all-purpose flour

1/2 cup granulated sugar

For the Filling:

3 large eggs

1 cup light corn syrup

1 cup brown sugar, packed

1 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups chopped pecans

Instructions

  1. For the Crust:
    • Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
    • In a medium bowl, mix the softened butter, flour, and granulated sugar until the mixture becomes crumbly and well-combined.
    • Press the crust mixture evenly into the bottom of the prepared baking dish.
    • Bake the crust for 15-20 minutes, or until it turns lightly golden. Once done, remove from the oven and set aside.
  2. For the Filling:
    • In a large bowl, whisk together the eggs, corn syrup, brown sugar, vanilla extract, and salt until smooth and fully combined.
    • Stir in the chopped pecans until evenly incorporated.
  3. Assemble and Bake:
    • Pour the filling mixture over the pre-baked crust, spreading it out evenly.
    • Return the pan to the oven and bake for 30-35 minutes, or until the filling is set and golden brown.
    • Let the bars cool completely in the pan before slicing them into squares.

Notes

Nut-Free Variation: Swap the pecans for chopped chocolate, caramel bits, or dried fruits like cranberries or raisins.

Gluten-Free Option: Use a gluten-free flour blend in place of all-purpose flour for a gluten-free version.

Spiced-up Filling: Add a teaspoon of cinnamon, nutmeg, or pumpkin pie spice for a fall-inspired twist.
