Description
A fresh and vibrant pasta salad featuring tender pasta, creamy burrata, zesty lemon vinaigrette, and fresh herbs. Perfect for summer lunches, backyard gatherings, or a light dinner.
Ingredients
12 oz short pasta (such as fusilli or farfalle)
1/4 cup olive oil
Zest of 1 lemon
Juice of 2 lemons
1 tablespoon honey or maple syrup
1 garlic clove, finely minced
Salt and pepper to taste
1/4 cup fresh basil, chopped
1/4 cup fresh mint, chopped
1/2 cup arugula (optional)
1/2 cup cherry tomatoes, halved
8 oz burrata cheese
Crushed red pepper flakes (optional)
Instructions
- Cook the pasta in salted water according to package instructions until al dente. Drain and rinse under cold water.
- While pasta cooks, whisk together olive oil, lemon zest, lemon juice, honey, garlic, salt, and pepper to create the dressing.
- In a large mixing bowl, combine the cooled pasta, basil, mint, arugula (if using), and cherry tomatoes.
- Pour the lemon vinaigrette over the salad and toss gently to coat.
- Tear the burrata into bite-sized pieces and add them on top of the pasta salad.
- Optionally garnish with extra herbs and a sprinkle of crushed red pepper flakes.
- Serve immediately or chill for 30 minutes before serving for enhanced flavor.
Notes
Chilling the salad enhances the flavors.
Swap burrata with mozzarella pearls if desired.
Add grilled chicken or chickpeas for extra protein.
Use orecchiette or penne if you don’t have fusilli.
Fresh herbs are preferred, but dried can be used in smaller quantities.
