Ingredients
4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1/2 cup chicken broth
1/2 cup freshly squeezed lemon juice
1 tablespoon lemon zest
1 teaspoon fresh thyme (optional)
1 tablespoon chopped parsley (for garnish)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken breasts for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
- Add chicken broth, lemon juice, and lemon zest. Scrape up browned bits from the pan with a spatula to incorporate into the sauce.
- Let the sauce simmer for 3-4 minutes to reduce slightly. Taste and adjust seasoning as needed.
- Return chicken breasts to skillet and spoon sauce over them. Let simmer for an additional 2-3 minutes.
- Garnish with fresh thyme and chopped parsley before serving.
Notes
For a creamy variation, add a splash of heavy cream to the sauce.
For extra veggies, sauté spinach or asparagus after cooking the chicken.
Use white wine in place of some chicken broth for added depth of flavor.
Add red pepper flakes or hot sauce for a spicy twist.
