Ingredients
1 cup cottage cheese

2 large eggs, separated

Instructions
- Preheat your oven to 350°F (175°C). Grease a 1-quart baking dish or several small ramekins.
- In a blender or food processor, blend the cottage cheese until smooth.
- In a large bowl, combine the blended cottage cheese, sugar, flour, egg yolks, lemon juice, lemon zest, and salt. Mix until well combined.
- Gradually stir in the milk until the mixture is smooth.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the lemon mixture.
- Pour the mixture into the prepared baking dish or ramekins. Place the dish(es) in a larger baking pan, and pour hot water into the pan until it reaches halfway up the sides of the dish(es).
