Description
Lemon Garlic Chicken Zoodles is a quick, low-carb, gluten-free dish that combines tender chicken, fresh zucchini noodles, and a zesty lemon garlic sauce. Perfect for a healthy lunch or dinner in just 25 minutes!
Ingredients
2 medium zucchinis, spiralized into zoodles
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
3 garlic cloves, minced
1 lemon (zested and juiced)
1/2 cup chicken broth
1/4 teaspoon red pepper flakes (optional)
1/4 cup grated Parmesan cheese (optional, for serving)
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden and fully cooked. Remove and set aside.
- In the same skillet, heat the remaining olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in chicken broth, lemon juice, and zest. Simmer for 2-3 minutes to slightly reduce the sauce.
- Add zucchini noodles and toss in the sauce. Cook for 2-3 minutes until tender but crisp.
- Return chicken to the skillet. Mix and heat through for 1-2 minutes.
- Adjust seasoning as needed. Garnish with Parmesan cheese and parsley before serving.
Notes
Protein Alternatives: Swap chicken with shrimp or tofu for variety.
Vegetable Additions: Include bell peppers or cherry tomatoes for extra flavor.
Storage: Refrigerate leftovers in an airtight container for up to 2 days. Reheat gently to maintain zoodle texture.
Keep Zoodles Crisp: Avoid overcooking or overcrowding the skillet to prevent sogginess.
