Ingredients

2 medium zucchinis, spiralized into zoodles

2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 garlic cloves, minced

1 lemon (zested and juiced)

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional, for serving)

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden and fully cooked. Remove and set aside.
  2. In the same skillet, heat the remaining olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.

  4. Add zucchini noodles and toss in the sauce. Cook for 2-3 minutes until tender but crisp.
