Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar in a large bowl until smooth and creamy.
- Mix in the lemon juice and lemon zest.
- In a separate bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the wet ingredients until a soft dough forms.
- Roll the dough into 1-inch balls, place them on the prepared baking sheet, and flatten slightly with your palm.
- Bake for 12-15 minutes or until the edges are just beginning to turn golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While cooling, prepare the lemon glaze by whisking together the powdered sugar and lemon juice. Add lemon zest if desired.
