Ingredients

2 cups rolled oats

1/2 cup almond flour

1/3 cup maple syrup or honey

1/4 cup coconut oil, melted

1/4 cup lemon juice (freshly squeezed)

1 tablespoon lemon zest

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup shredded coconut (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats and almond flour.
  2. In a separate bowl, whisk together the maple syrup, melted coconut oil, lemon juice, lemon zest, vanilla extract, and salt.
  3. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in shredded coconut if using.
  4. Scoop tablespoon-sized portions of the mixture and form into small cookies, gently pressing to shape.
  5. Place the cookies on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Enjoy straight from the fridge for a refreshing, chewy, no-bake treat!

Notes

Store the cookies in an airtight container in the fridge for up to one week.

These cookies are also freezer-friendly; they can be stored in a freezer-safe bag for up to 3 months.

To make them vegan, simply substitute honey with maple syrup.

For a gluten-free option, almond flour is a great choice, but regular flour can be used if preferred.
