Description

Juicy and flavorful lemon pepper chicken breast, seasoned with bright lemon zest and cracked black pepper. This easy, healthy meal is perfect for weeknight dinners or meal prep.


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cracked black pepper

1/2 teaspoon salt

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C). Pat chicken breasts dry with paper towels.
  2. Mix olive oil, lemon zest, lemon juice, garlic powder, onion powder, cracked black pepper, and salt in a small bowl.
  3. Rub the seasoning mixture evenly over both sides of the chicken breasts.
  4. Heat a large oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden brown.
  5. Transfer skillet to the oven and bake for 18-20 minutes or until the internal temperature reaches 165°F (75°C).
  6. Remove from oven, rest for 5 minutes, and garnish with fresh parsley. Serve immediately.

Notes

For added spice, include red chili flakes in the seasoning.

Chicken thighs can be substituted, adjusting the cooking time.

To ensure the chicken is moist and fully cooked, use a meat thermometer.
