Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
3 shallots, thinly sliced
3 cloves garlic, minced
1/2 cup chicken broth
1/3 cup fresh lemon juice (about 2 lemons)
1 teaspoon lemon zest
1 teaspoon Dijon mustard
2 tablespoons unsalted butter
Salt and black pepper, to taste
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Season both sides of the chicken breasts with salt and black pepper.
- Heat olive oil in a large skillet over medium heat. Sear the chicken for 4-5 minutes per side until golden brown, then remove and set aside.
- In the same skillet, sauté shallots for 3-4 minutes until softened and caramelized. Add minced garlic and cook for 1 more minute.
