Ingredients

1 cup water

1 cup granulated sugar

1 cup freshly squeezed lemon juice (from about 45 large lemons)

1 tablespoon lemon zest

Instructions

  1. Make Simple Syrup: Combine water and sugar in a saucepan over medium heat, stirring until sugar dissolves. Remove from heat and let cool to room temperature.
  2. Add Lemon: Once cooled, add the freshly squeezed lemon juice and lemon zest. Stir well to combine.
  3. Chill Mixture: Transfer the mixture to the refrigerator to chill for at least 1 hour.
  4. Churn: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, until it reaches a smooth, thick consistency.
  5. Freeze: Transfer to a container and freeze for an additional 2–3 hours, or until firm.

No Ice Cream Maker? Pour the mixture into a shallow container and freeze, stirring every 30 minutes to achieve a smooth texture.
