Ingredients

1 cup unsalted butter, softened

2/3 cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon ground cinnamon

1/2 cup ground almonds or almond flour

1/2 cup Italian strawberry jam

Powdered sugar, for dusting


Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Mix in the egg yolk and vanilla extract until well combined.
  2. Add Dry Ingredients: In a separate bowl, whisk together the flour, ground cinnamon, salt, and ground almonds. Gradually mix the dry ingredients into the butter mixture until the dough comes together.
  3. Chill the Dough: Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll and Cut the Cookies: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Roll out the chilled dough to about 1/8-inch thickness on a floured surface. Use a round cookie cutter to cut out cookies, and a smaller cutter to create a window in half of the cookies.
  5. Bake: Place cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Assemble the Cookies: Spread 1 teaspoon of strawberry jam on the flat side of each solid cookie. Top with the cookies that have the cut-out centers. Dust with powdered sugar before serving.
