Description

These low-calorie air fryer zucchini fries are crispy, golden, and seasoned to perfection, offering a healthy alternative to traditional fries. Coated in a blend of whole wheat breadcrumbs and Parmesan, they’re air-fried for a guilt-free snack or side dish.


Ingredients

2 medium zucchinis, sliced into fry-sized strips

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper, to taste

2 eggs, beaten

Olive oil spray


Instructions

  1. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  2. Slice the zucchinis into even fry-sized strips and pat them dry with a paper towel to remove excess moisture.
  3. In a shallow bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini strip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to help it stick.
  5. Place the coated zucchini fries in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding.
  6. Lightly spray the fries with olive oil spray.
  7. Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve immediately with your favorite dipping sauce or enjoy on their own.

Notes

Use panko for a lighter, crunchier texture.

Make it gluten-free by using gluten-free breadcrumbs.

For a dairy-free version, replace Parmesan with nutritional yeast.
