Ingredients
2 medium zucchinis, sliced into fry-sized strips
1/2 cup whole wheat breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper, to taste
2 eggs, beaten
Olive oil spray
Instructions
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Slice the zucchinis into even fry-sized strips and pat them dry with a paper towel to remove excess moisture.
- In a shallow bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each zucchini strip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to help it stick.
- Place the coated zucchini fries in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding.
- Lightly spray the fries with olive oil spray.
- Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce or enjoy on their own.

Use panko for a lighter, crunchier texture.
Make it gluten-free by using gluten-free breadcrumbs.
For a dairy-free version, replace Parmesan with nutritional yeast.
