Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup brown sugar
1 tablespoon ground cinnamon
4 oz cream cheese, softened
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, mix the milk, melted butter, eggs, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- In a small bowl, mix the brown sugar and ground cinnamon.
- Fill each muffin liner halfway with batter. Add a teaspoon of the cinnamon-sugar mixture and a small dollop of cream cheese. Top with the remaining batter and sprinkle with the remaining cinnamon-sugar mixture.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use room temperature cream cheese.
