Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup brown sugar

1 tablespoon ground cinnamon

4 oz cream cheese, softened


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix the milk, melted butter, eggs, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. In a small bowl, mix the brown sugar and ground cinnamon.
  6. Fill each muffin liner halfway with batter. Add a teaspoon of the cinnamon-sugar mixture and a small dollop of cream cheese. Top with the remaining batter and sprinkle with the remaining cinnamon-sugar mixture.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature cream cheese.
