Description

Ingredients

1 3/4 cups powdered sugar

1 cup almond flour

3 large egg whites, room temperature

1/4 cup granulated sugar

1/2 teaspoon vanilla extract (or almond extract)

Food coloring (optional)

Buttercream, ganache, or jam for filling


Instructions

  1. Sift together the powdered sugar and almond flour in a large bowl to remove any clumps.
  2. In a separate bowl, beat the egg whites on medium speed until foamy, then gradually add the granulated sugar. Increase the speed and beat until stiff peaks form.
  3. Gently fold the almond flour mixture into the egg whites in three batches. Add the vanilla extract and food coloring (if using) during the final fold.
  4. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto a parchment-lined baking sheet, spaced about 1 inch apart.
  5. Tap the baking sheet firmly on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes until a skin forms on top and they are no longer sticky to the touch.
  6. Preheat the oven to 300°F (150°C). Bake the macarons for 15-18 minutes, or until they have risen and developed their signature “feet.”
  7. Remove from the oven and allow the macarons to cool completely before removing them from the baking sheet.
  8. Once cool, sandwich the macarons together with buttercream, ganache, or jam.
