Ingredients
1 3/4 cups powdered sugar
1 cup almond flour
3 large egg whites, room temperature

Instructions
- Sift together the powdered sugar and almond flour in a large bowl to remove any clumps.
- In a separate bowl, beat the egg whites on medium speed until foamy, then gradually add the granulated sugar. Increase the speed and beat until stiff peaks form.
- Gently fold the almond flour mixture into the egg whites in three batches. Add the vanilla extract and food coloring (if using) during the final fold.
- Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto a parchment-lined baking sheet, spaced about 1 inch apart.
- Tap the baking sheet firmly on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes until a skin forms on top and they are no longer sticky to the touch.
- Preheat the oven to 300°F (150°C). Bake the macarons for 15-18 minutes, or until they have risen and developed their signature “feet.”
- Remove from the oven and allow the macarons to cool completely before removing them from the baking sheet.
- Once cool, sandwich the macarons together with buttercream, ganache, or jam.
