1 cup unsalted butter, softened

2 large eggs

1 cup maraschino cherries, drained and chopped

1 cup semisweet chocolate chips


Instructions

  3. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.

  5. Gently fold in the maraschino cherries and chocolate chips, ensuring they are evenly distributed throughout the dough.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, or until the edges are lightly golden but the centers are still soft. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Pat maraschino cherries dry with a paper towel to remove excess moisture before adding them to the dough.

For extra chewiness, slightly underbake the cookies and let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Store in an airtight container for up to 1 week or freeze for up to 3 months.
