1 tablespoon maple syrup or honey
1 garlic clove, minced
1 teaspoon grated fresh ginger
1 teaspoon toasted sesame seeds (optional)

Instructions
- Prepare the Tofu: Drain and press the tofu to remove excess moisture. Wrap it in a clean kitchen towel, place a heavy object on top, and press for 15–20 minutes.
- Make the Marinade: In a small bowl, whisk soy sauce, rice vinegar, sesame oil, maple syrup (or honey), garlic, and ginger until combined.
- Marinate: Cut the tofu into cubes or slices. Place in a shallow dish or zip-top bag, pour marinade over, toss to coat, and refrigerate for 30 minutes to 2 hours.
