1 lb chicken breast, cubed

1/2 teaspoon dried oregano
1/2 teaspoon dried basil

2 cups baby spinach leaves

Instructions
- In a large pot, heat the olive oil over medium heat. Add the cubed chicken and cook until golden brown on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.
- Pour in the chicken broth and bring to a simmer. Add the chopped sun-dried tomatoes, dried thyme, oregano, basil, salt, and pepper.
- Return the chicken to the pot and let it simmer for 10-12 minutes, allowing the flavors to meld and the chicken to become tender.
- Stir in the heavy cream and baby spinach, cooking for an additional 2-3 minutes until the spinach is wilted.
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning as needed.
