Ingredients

1 lb chicken breast, diced

1 lb cheese tortellini (fresh or frozen)

2 tablespoons olive oil

1/2 cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, chopped (for garnish)

Instructions

  1. Cook the Tortellini:
    • Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Prepare the Sauce:
    • In the same skillet, add the sun-dried tomatoes and minced garlic. Sauté for 2-3 minutes until the garlic is fragrant.
    • Add the Italian seasoning and crushed red pepper flakes, stirring to combine.
    • Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
  4. Combine Ingredients:
    • Add the cooked chicken back to the skillet.
    • Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
    • Add the cooked tortellini and gently toss to coat in the sauce.
  5. Serve:
    • Garnish with chopped fresh basil and additional Parmesan cheese if desired. Serve hot and enjoy!

Notes

For a lighter version, you can substitute heavy cream with half-and-half.

Add vegetables like spinach, bell peppers, or mushrooms for extra nutrition.

Adjust the crushed red pepper flakes to your preferred spice level.
