Ingredients

4 salmon fillets (6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream

1/4 cup grated parmesan cheese

1/4 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

2 tablespoons fresh parsley, chopped


Instructions

  1. Season salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Sear salmon skin side down for 4-5 minutes per side or until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic for 1 minute until fragrant.
  4. Pour in chicken broth and scrape the skillet to deglaze. Simmer for 2-3 minutes.
  5. Stir in heavy cream, parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Simmer for 3-4 minutes until thickened.
  6. Return salmon to the skillet, spoon sauce over the fillets, and simmer for 2-3 minutes to warm through.
  7. Garnish with fresh parsley and serve immediately with your favorite sides.
