Ingredients

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy)

1 small onion, diced

2 cloves garlic, minced

1 large carrot, diced

2 ribs celery, diced

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

4 cups chicken broth

1 cup orzo pasta

2 cups fresh spinach, roughly chopped

Salt and pepper, to taste

Freshly grated Parmesan cheese, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles. Drain any excess fat.
  2. Stir in onion, garlic, carrot, and celery, and sauté for 5 minutes until vegetables are softened.
  3. Add diced tomatoes with juices, oregano, basil, and red pepper flakes. Pour in chicken broth and bring to a boil.
  4. Add orzo pasta and cook for 8-10 minutes, stirring occasionally until orzo is tender.
  5. Stir in fresh spinach and allow to wilt. Season with salt and pepper to taste.
  6. Ladle soup into bowls, garnish with Parmesan cheese, and serve hot.

Notes

For a vegetarian version, use plant-based sausage and substitute vegetable broth for chicken broth.

Store leftovers in the fridge for up to 3 days. For best results, cook orzo separately if freezing.
