Ingredients
1 tablespoon olive oil

1 small onion, diced

1 large carrot, diced
2 ribs celery, diced
1 can (14.5 oz) diced tomatoes, undrained
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
4 cups chicken broth
1 cup orzo pasta
2 cups fresh spinach, roughly chopped
Salt and pepper, to taste
Freshly grated Parmesan cheese, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles. Drain any excess fat.
- Stir in onion, garlic, carrot, and celery, and sauté for 5 minutes until vegetables are softened.
