Description

Ingredients

3 large russet potatoes, peeled and diced

2 tablespoons butter

1/4 cup milk

1/2 cup shredded cheddar cheese

Salt and pepper to taste

1/4 cup chopped green onions

1/4 cup chopped meat (optional)

Olive oil spray for greasing


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil spray.
  2. Bring water to a boil in a large pot and cook the diced potatoes for 10-12 minutes until tender.
  3. Drain the potatoes and return them to the pot, mashing them until smooth.
  4. Stir in butter and milk until creamy, then season with salt and pepper.
  5. Mix in shredded cheddar cheese, green onions, and chopped meat (if using).
  6. Spoon the mashed potato mixture into the muffin tin, pressing down gently to form cups.
  7. Bake for 20-25 minutes or until the edges are golden and crispy.
