Description
A moist and buttery Matcha Pound Cake with a rich crumb and earthy flavor. This loaf combines the classic comfort of pound cake with the refined taste and vibrant color of matcha green tea, making it perfect for tea time or gifting.
Ingredients
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
4 large eggs, room temperature
1 1/2 cups (190g) all-purpose flour
1 tbsp matcha green tea powder (culinary grade or higher)
1/2 tsp baking powder
1/4 tsp salt
1/4 cup (60ml) whole milk
1 tsp vanilla extract
Optional: powdered sugar or white chocolate drizzle for garnish
Instructions
- Preheat the oven to 325°F (165°C) and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, sift together the flour, matcha powder, baking powder, and salt.
- In a large bowl, cream the softened butter and sugar with a mixer until light and fluffy (about 3–4 minutes).
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Add half of the dry ingredients to the batter, followed by the milk, mixing on low speed after each addition.
- Add the remaining dry ingredients and mix just until combined.
- Pour the batter into the prepared loaf pan, smooth the top, and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Optional: Dust with powdered sugar or drizzle with melted white chocolate before serving.
Notes
Add 1 tsp of orange or lemon zest for a citrus twist.
Substitute vanilla with almond extract for a nuttier flavor.
Can be made in mini loaf pans or muffin tins for individual servings.
Add a matcha or lemon glaze for extra flavor and presentation.
Store at room temperature for 3 days, or refrigerate for up to 5 days.
