Description

Ingredients

1.5 lbs baby potatoes, quartered

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 lb ground turkey sausage

8 large eggs

2 tablespoons milk (dairy or non-dairy)

1/2 tablespoon butter or oil for scrambling

Optional toppings: shredded cheese, avocado, hot sauce, fresh herbs


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the quartered baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 25–30 minutes, flipping once halfway through, until golden and crispy.
  4. While potatoes roast, brown the ground turkey sausage in a skillet over medium heat for about 8–10 minutes, breaking it up as it cooks. Set aside once fully cooked.
  5. In a bowl, whisk together the eggs, milk, and a pinch of salt.
  6. Heat butter or oil in a nonstick skillet over medium-low heat and scramble the eggs until just set. Remove from heat promptly.
  7. Divide the roasted potatoes, scrambled eggs, and cooked sausage evenly into 4–5 meal prep containers.
  8. Let the contents cool, then seal and refrigerate. Reheat in the microwave when ready to eat, and add desired toppings.
