Ingredients
1 pound ground beef
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, thinly sliced
1 zucchini, cut into half-moons
1 cup cherry tomatoes, halved
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
1/4 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
Juice of 1/2 lemon
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, sauté for 2-3 minutes until fragrant and softened.
- Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned and cooked through, about 5-7 minutes. Drain any excess grease if necessary.
- Stir in the red bell pepper and zucchini, cooking for 3-4 minutes until vegetables soften.
- Add the cherry tomatoes, cumin, oregano, paprika, red pepper flakes, salt, and pepper. Stir well to combine.
- Continue cooking for 3-4 minutes to allow the flavors to meld and the tomatoes to soften.
- Remove from heat and stir in the lemon juice.
- Garnish with crumbled feta and fresh parsley before serving.
