Description

Melting Sweet Potatoes are caramelized, tender sweet potato rounds roasted to golden perfection with butter, olive oil, and a blend of savory spices. Finished with a splash of broth for a melt-in-your-mouth experience, these sweet potatoes make the perfect side dish for any occasion. With a balance of sweet and savory flavors, they’re a crowd-pleaser that pairs well with roasted meats, fall-inspired meals, or enjoyed on their own!

Ingredients

2 pounds sweet potatoes, peeled and cut into 1-inch thick rounds

4 tablespoons unsalted butter, melted

2 tablespoons olive oil

1 tablespoon brown sugar

1 teaspoon ground cinnamon

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup chicken or vegetable broth

Fresh parsley or thyme for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Season the Sweet Potatoes: Toss the sweet potato rounds with melted butter, olive oil, brown sugar, cinnamon, garlic powder, salt, and black pepper until evenly coated.
  3. Roast the Sweet Potatoes: Arrange the sweet potatoes in a single layer on the prepared baking sheet. Roast for 20 minutes.
  4. Flip and Add Broth: Flip the sweet potatoes and pour the chicken or vegetable broth over them. Roast for an additional 20-25 minutes, or until the sweet potatoes are caramelized and tender.
  5. Serve: Transfer to a serving platter and garnish with fresh parsley or thyme. Serve warm.

Notes

Storage: Leftover sweet potatoes can be stored in an airtight container in the fridge for up to 4 days. To reheat, use the oven or air fryer for the best texture.

Vegan Option: Use plant-based butter and vegetable broth to make this recipe vegan.

Crispier Texture: For crispier edges, increase the oven temperature to 425°F (220°C) for the last 5 minutes of roasting.
