Description

Mini meatloaf muffins made with seasoned ground beef, baked in a muffin tin, and topped with creamy mashed potato frosting for a fun and comforting twist on a classic family dinner.


Ingredients

1 1/2 pounds ground beef

1 cup breadcrumbs

1/2 cup milk

1 large egg

1/3 cup ketchup

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 pounds russet potatoes, peeled and cubed

4 tablespoons butter

1/3 cup milk or heavy cream

Salt to taste

1/4 cup ketchup (for topping)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix until just combined.
  3. Divide the mixture evenly among the muffin cups and gently press down to shape.
  4. Top each with a small spoonful of ketchup.
  5. Bake for 20–25 minutes, until the internal temperature reaches 160°F (71°C).
  6. Meanwhile, place cubed potatoes in a large pot and cover with water. Bring to a boil and cook for 15–20 minutes until fork-tender.
  7. Drain potatoes and return to the pot. Add butter, milk or cream, and salt. Mash until smooth and creamy.
  8. Transfer mashed potatoes to a piping bag fitted with a star tip and pipe onto each meatloaf muffin, or spoon and spread on top. Serve warm.

Notes

Do not overmix the meat to keep the muffins tender.

Ground turkey can be substituted for a lighter option.

Add shredded cheddar cheese or finely chopped onions for extra flavor.

Store leftovers in an airtight container in the refrigerator for 3–4 days.

Freeze cooled muffins for up to 2 months and thaw overnight before reheating.
