Description

Ingredients

1 cup unsalted butter, softened

½ cup powdered sugar

1 tsp vanilla extract

½ tsp peppermint extract

2 cups all-purpose flour

½ cup mini chocolate chips

¼ tsp salt (optional)

½ cup powdered sugar (for rolling)


Instructions

  1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add vanilla and peppermint extract, mixing well to combine.
  4. Gradually add the flour and salt (if using), mixing until a dough forms.
  5. Gently fold in mini chocolate chips.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the cookies are set but not browned.
  8. Let the cookies cool on the baking sheet for 5 minutes, then roll them in powdered sugar while they’re still warm.
  9. Allow the cookies to cool completely, then roll them in powdered sugar again for a snowy finish.

Notes

If dough is too sticky, refrigerate for about 30 minutes before rolling.

For gluten-free cookies, use a suitable gluten-free flour blend.

You can use regular-sized chocolate chips, but mini chips blend more evenly.

Peppermint extract can be substituted with more vanilla extract or almond extract if preferred.
