Ingredients
For the Cupcakes:
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup cocoa powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 large eggs
½ cup vegetable oil
1 cup buttermilk
1 tsp vanilla extract
1 tsp peppermint extract
For the Frosting:
1 cup unsalted butter, room temperature
4 cups powdered sugar
2 tbsp heavy cream
½ tsp peppermint extract
Green food coloring (optional)
For the Ganache:
½ cup heavy cream
½ cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix together the eggs, vegetable oil, buttermilk, vanilla extract, and peppermint extract.
- Combine the wet and dry ingredients, stirring until smooth.
- Fill the cupcake liners 2/3 full with the batter and bake for 18-20 minutes. Allow to cool completely.
- For the frosting, beat together the butter, powdered sugar, cream, and peppermint extract until smooth. Add green food coloring if desired.
- Frost the cooled cupcakes.
- To make the ganache, heat the cream until simmering and pour over the chocolate chips. Stir until smooth and drizzle over the frosted cupcakes.
Notes
These cupcakes can be made ahead of time and stored in an airtight container.
For a stronger mint flavor, increase the peppermint extract slightly.
