Description

Chewy, buttery M&M Cookie Bars packed with melty chocolate chips and colorful M&M’s. This quick and easy dessert is perfect for parties, lunchboxes, or late-night cravings—no chilling required and ready in under an hour.


Ingredients

2 and 1/8 cups (265g) all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup (170g) unsalted butter, melted and slightly cooled

1 cup (200g) packed light brown sugar

1/4 cup (50g) granulated sugar

1 large egg

1 egg yolk, at room temperature

2 teaspoons pure vanilla extract

1 cup (180g) semi-sweet chocolate chips

1 cup (200g) M&M’s (plus more for topping, if desired)


Instructions

  1. Preheat the oven to 325°F (163°C) and line a 9×13 inch baking pan with parchment paper or lightly grease it.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, mix the melted butter with the brown sugar and granulated sugar until smooth.
  4. Whisk in the egg and egg yolk, then stir in the vanilla extract.
  5. Gradually stir the dry ingredients into the wet ingredients until fully combined.
  6. Fold in the chocolate chips and M&M’s, reserving a few to press on top if desired.
  7. Spread the dough evenly into the prepared pan and gently press in the extra M&M’s.
  8. Bake for 28 to 32 minutes, or until the top is lightly golden brown. The center may look soft but will set as it cools.
  9. Let the bars cool completely in the pan before cutting into squares.
