Chewy, buttery M&M Cookie Bars packed with melty chocolate chips and colorful M&M’s. This quick and easy dessert is perfect for parties, lunchboxes, or late-night cravings—no chilling required and ready in under an hour.
Ingredients
2 and 1/8 cups (265g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (170g) unsalted butter, melted and slightly cooled
1 cup (200g) packed light brown sugar
1/4 cup (50g) granulated sugar
1 large egg
1 egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 cup (180g) semi-sweet chocolate chips
1 cup (200g) M&M’s (plus more for topping, if desired)
Instructions
- Preheat the oven to 325°F (163°C) and line a 9×13 inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, mix the melted butter with the brown sugar and granulated sugar until smooth.
- Whisk in the egg and egg yolk, then stir in the vanilla extract.
- Gradually stir the dry ingredients into the wet ingredients until fully combined.
- Fold in the chocolate chips and M&M’s, reserving a few to press on top if desired.
- Spread the dough evenly into the prepared pan and gently press in the extra M&M’s.
- Bake for 28 to 32 minutes, or until the top is lightly golden brown. The center may look soft but will set as it cools.
- Let the bars cool completely in the pan before cutting into squares.
